One-Pot Lasagna Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (6-ounce) can tomato paste
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Directions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until onion is translucent.
  2. Add ground beef, salt, pepper, and Italian seasoning. Cook until beef is browned.
  3. Stir in chicken broth, diced tomatoes, and tomato paste. Bring to a boil.
  4. Add broken lasagna noodles, reduce heat, and simmer for about 20 minutes or until noodles are tender.
  5. In a small bowl, mix together ricotta, mozzarella, and Parmesan cheese.
  6. Serve soup in bowls, topped with a dollop of the cheese mixture and garnished with fresh basil.
