Cheesy Taco Lasagna

  1. Ingredients:
  • 12 lasagna noodles
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 (16 oz) jar salsa
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 3 cups shredded cheddar cheese
  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions, then drain and set aside.
  3. In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  4. Add taco seasoning and water to the skillet. Bring to a boil, reduce heat, and simmer for 5 minutes.
  5. In a bowl, mix salsa, black beans, and corn. Set aside.
  6. In another bowl, combine cream cheese, half of the cheddar cheese, green onions, and cilantro.
  7. Spread a layer of meat on the bottom of a baking dish, top with a layer of noodles, then the cream cheese mixture, and then the salsa mixture. Repeat the layers, ending with noodles.
  8. Sprinkle the remaining cheddar cheese on top.
  9. Bake for 25-30 minutes or until cheese is melted and bubbly.
  10. Let stand for 10 minutes before serving.
