- Ingredients:
- 12 lasagna noodles
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 (16 oz) jar salsa
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 3 cups shredded cheddar cheese
- 1 (8 oz) package cream cheese, softened
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Directions:
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, then drain and set aside.
- In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
- Add taco seasoning and water to the skillet. Bring to a boil, reduce heat, and simmer for 5 minutes.
- In a bowl, mix salsa, black beans, and corn. Set aside.
- In another bowl, combine cream cheese, half of the cheddar cheese, green onions, and cilantro.
- Spread a layer of meat on the bottom of a baking dish, top with a layer of noodles, then the cream cheese mixture, and then the salsa mixture. Repeat the layers, ending with noodles.
- Sprinkle the remaining cheddar cheese on top.
- Bake for 25-30 minutes or until cheese is melted and bubbly.
- Let stand for 10 minutes before serving.
