Shrimp Broccoli Alfredo

Ingredients:

  • 8 oz fettuccine pasta
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. Cook fettuccine according to package instructions; add broccoli in the last 3 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add shrimp and garlic, cooking until shrimp are pink, about 2-3 minutes. Remove shrimp and set aside.
  3. In the same skillet, add heavy cream and bring to a simmer. Reduce heat and add Parmesan cheese, stirring until sauce thickens.
  4. Return shrimp to skillet and add cooked pasta and broccoli. Toss until everything is coated in the Alfredo sauce.
  5. Season with salt and pepper to taste and garnish with fresh parsley.
