MOUNDS CAKE

A Mounds cake, inspired by the classic Mounds candy bar, would typically include a rich chocolate cake base with a sweet coconut filling and a chocolate coating. Here’s a recipe idea for a Mounds Cake:

Ingredients

For the Chocolate Cake:

  1. 1¾ cups all-purpose flour
  2. 2 cups granulated sugar
  3. ¾ cup cocoa powder
  4. 2 teaspoons baking soda
  5. 1 teaspoon baking powder
  6. 1 teaspoon salt
  7. 1 cup buttermilk
  8. ½ cup vegetable oil
  9. 2 large eggs
  10. 2 teaspoons vanilla extract
  11. 1 cup hot coffee or hot water

For the Coconut Filling:

  1. 4 cups shredded coconut
  2. 1 can (14 oz) sweetened condensed milk

For the Chocolate Coating:

  1. 2 cups semi-sweet chocolate chips
  2. ¾ cup heavy cream

Instructions

Making the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. Mix the dry ingredients (flour, sugar, cocoa, baking soda, baking powder, salt) in a large bowl.
  3. Add buttermilk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined.
  4. Stir in hot coffee by hand. The batter will be thin.
  5. Pour batter into prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the cakes in the pans for 10 minutes, then remove to a wire rack to cool completely.

Preparing the Coconut Filling:

  1. Combine shredded coconut and sweetened condensed milk in a bowl until well mixed.

Assembling the Cake:

  1. Place one cake layer on a serving plate.
  2. Spread the coconut filling evenly over the cake layer.
  3. Top with the second cake layer.

For the Chocolate Coating:

  1. Heat heavy cream in a small saucepan until it just begins to boil.
  2. Pour over chocolate chips in a bowl and let sit for 5 minutes, then whisk until smooth.
  3. Pour the chocolate ganache over the cake, allowing it to drip down the sides.

Let the cake set for a bit before serving. Enjoy your homemade Mounds Cake!
