  • 1 lb ground beef
  • 1 can refried beans
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 onion, chopped
  • 2 cups enchilada sauce
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste


  1. Cook ground beef and onion in a skillet over medium heat until beef is browned. Season with salt and pepper.
  2. Warm tortillas in a microwave or on a skillet to make them pliable.
  3. Spread refried beans on each tortilla, add a portion of cooked beef, and top with shredded cheese.
