  • 1 tablespoon extra virgin olive oil

  • 1 (15 oz) can black beans, thoroughly rinsed and drained
  • 1 cup sharp cheddar cheese (4 oz), grated or cubed
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, diced
  • 2 green onions, sliced
  • Fresh cilantro, chopped
  • Fresh parsley, chopped

Instructions

  1. In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain grease and season with salt and pepper to taste. Set aside to cool.
  2. Cook pasta according to package instructions. Toss cooked pasta with 1 tablespoon olive oil and set aside to cool.
  3. In a large serving bowl, combine ½ cup olive oil, lime juice, and taco seasoning. Whisk together until well combined.
  4. Add the cooled pasta, ground beef, corn, black beans, cheddar cheese, cherry tomatoes, bell peppers, jalapeños, and green onions to the bowl with dressing.
  5. Toss everything until well combined. Cover and refrigerate for at least 30 minutes before serving.
  6. Garnish with fresh cilantro or parsley if desired. Taste before serving and add extra salt, pepper, or lime juice if needed!

Tips & Variations

  • For a spicier kick, add a diced jalapeño or a dash of hot sauce to the dressing
  • Make it vegetarian by omitting the bacon and adding extra beans or grilled vegetables
  • Try using smoked gouda or pepper jack cheese instead of cheddar for a different flavor profile
  • For a protein boost, add grilled chicken, steak strips, or seasoned ground beef
  • Prepare all components except avocado up to 24 hours in advance, then combine just before serving
  • Add a handful of crushed tortilla chips on top for extra crunch when serving

Serving Suggestions

Serve this robust Cowboy Pasta Salad alongside grilled meats like burgers, steaks, or barbecue chicken for the ultimate cookout spread. It also pairs wonderfully with cornbread or a simple green salad for a complete meal.

For a fun presentation, serve in individual mason jars at your next gathering, or pile it high on a large platter garnished with extra cilantro, lime wedges, and a drizzle of barbecue sauce.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days
  • If making ahead, reserve the avocado and half the dressing, adding them just before serving
  • For best flavor, allow the salad to come to room temperature for about 15 minutes before serving if it’s been refrigerated
  • The pasta will absorb some of the dressing over time – if needed, add a splash more ranch to refresh leftovers
